CARROTS: Good for Your Eyes Only, or So You Think.


"Eat your carrots, they are good for your eyes" is a popular saying  your mom told you to get you to eat your carrots. Carrots are a rich source of beta-carotene, the pigment that gives many fruits and vegetables their bright red, yellow and green colors. Beta carotene, when consumed is converted to Vitamin A in our bodies, plays a crucial role in our vision and sight.



























ANTIOXIDANTS

Vitamin A also plays an important role as an antioxidant. Antioxidants which are also found in many fruits and vegetables can fight off free radicals in our bodies that can lead to cancers, cardiovascular disease and other inflammatory diseases. Our bodies are bombarded daily with free radicals every day from environmental toxins, cigarette smoke, and pesticides used on our foods. Over time, high exposure to free radicals can interfere with the normal growth of cells into our bodies and can lead to formation of cancer cells.
That is why is so important to consume a wide variety of fruits and vegetable every day. They provide us with a wide range of vitamins, minerals and phytonutrients that help us to fight against free radicals and nourish our bodies.










Carrot are available all year round and can be prepared in a number of different ways. One of my favorite ways to utilize carrots is to make a drink.

Try this simple, tasty and nutritious carrot pineapple drink.

 

CARROT PINEAPPLE DRINK

1 medium carrots
1/2 cup pineapple
1 cup almond milk
 
Blend all ingredients until smooth.
 
Carrots can also be replaced with 1/2 cup beets.
