Meatless Monday - Vegetable and Broad Bean Salad


This is one of my Meatless Monday dishes. It's a good idea to include a protein item. Protein keeps you full for longer. Adding your favorite bean or quinoa for protein and  added fiber is great way to increase the nutritive value of the dish. Going meatless - no meat, fish or poultry and including fruits, vegetables and whole grains in your meal plan at least once per week, is a natural way to help detoxify and clean your digestive tract. So if you are meat lover like myself, take on the challenge and choose one day out of your week to go meatless.

Meatless Monday - Vegetable and Broad Bean Salad

1 medium cucumber
1 cup can sweet corn or fresh corn off the husk
I medium tomato
1 medium gala apple
1 can broad bean (1 1/2 cups)
1 teaspoon rosemary, finely chopped
salt and black pepper to taste (optional)

Dice cucumber, tomato, apples and add to a bowl.
Add sweet corn, broad beans, salt, pepper, and rosemary and gently stir.
